This Monday, June 15, the Institut des Métiers de Saint-Étienne (IMSÉ) hosted the French selection of the World Burger Contest. Six chefs from all over France competed to try to qualify for the international final, which will be held during SIRHA Lyon 2027.

The candidates came from the four corners of France and overseas to take up this challenge, after several months of preparation. Under the watchful eye of a jury made up of five Meilleurs Ouvriers de France, they had to highlight regional productions. During this test, the chefs created two distinct recipes: a traditional burger incorporating emblematic products from the Auvergne-Rhône-Alpes region, such as Fourme de Montbrison, the Noix de Grenoble or the Cerise de Bessenay They also had to design a “cocktail burger”, a miniature and free creation that could be traditional, vegetable or sweet.

Apprentices alongside candidates

IMSÉ was not chosen at random to host this national selection. The establishment is recognized for its expertise in training and apprenticeship in catering trades. In this spirit of transmission, each of the competing chefs was accompanied by a clerk, an apprentice within the IMSÉ. An essential collaboration to successfully complete the various events of the day. “We need to have well-trained employees in our companies, to have motivated young people. Today, we plan to reward an apprentice out of the 6 young gastronomy talents who are in pairs with the professionals» explained Bruno Cabut, organizer of the World Burger Contest.Â

At the end of the competition, Matthias Carré won the French selection and will represent France in the international final of the World Burger Contest at SIRHA Lyon 2027.
