University of Idaho opens new meat science center

The University of Idaho has unveiled a new meat science innovation center, providing students with more classroom space and expanding research and production capabilities.

Located in Moscow, Idaho, the new facility replaces the outdated building previously used for Vandal Brand Meats. It is one of the few USDA-inspected locations in North Idaho where ranchers can process their beef.

The center is named in honor of Ron Richard, who played a key role in managing Vandal Brand Meats and increasing annual sales to over $300,000.

Phil Bass, an associate professor in the University of Idaho’s Department of Animal, Veterinary, and Food Sciences, highlighted the challenges posed by the old setup, where equipment had to be moved between the slaughter room and processing room to accommodate different activities.

The new center resolves these space issues, allowing for smoother operations and enhancing the learning environment for students.
