It is now possible to enjoy good bistronomic cuisine in the emblematic Metronum concert hall in Borderouge. We tested it for you.

After the Metronum, here is the Bistronum, a rather well-rounded canteen located in the heart of the architectural work dedicated to music, in Borderouge. It’s a pleasure, on sunny days, to sit on the terrace in the courtyard of the building. Atypical, modern, canon! When we came, the Toulouse group Slift, with a global aura, was in residence and punctuated our arrival in the background. Top!

To run this new table wanted by Fabien Lherisson, the boss of the place, we find Stéphane Terracher and Quinten Siesling. The first was a photographer before setting up his table d’hôte then Cook And The Gang, a catering company. And the second theater actor before launching into the kitchen in 2009. It is ultimately logical to find this trio, since the two thieves, before keeping a permanent foothold in Borderouge, were already taking care of the catering at the Metronum.

Already perfect formula at 21€

Open only for lunch, Stéphane and Quinten alternate in the kitchen and in the dining room, one week, one week the other. They have some flair, they both know how to play the pan, so it’s a real pleasure to be at their table. For this first meal, perfect potato velouté and chicken liver fricassee or magnificent roasted vegetable salad. The pork loin as a main course was responsive, well accompanied by butternut and lemon fennel. A fried rice that reminds us of Bangkok then a perfect citrus financier to enjoy with coffee in the sun on the terrace. We’ll come back!
